Being Domestic: Potato Chip Sugar Cookies

I have discovered something about myself recently.  Not only do I spend far too much time on Pinterest, but I have noticed a trend on my boards, specifically my food board.  I suffer from what I like to call "Paula Deen-itis."  I literally only pin/crave/demand comfort foods.  Your salads, smoothies, Weight Watchers recipes that always claim are sooo good until you realized that you are only allowed a literal forkful.... I sneer at you.  Twice baked Parmesan spaghetti? Oh...that sounds good. 5 cheese potato soup?  Yes, please. Mississippi Sin Dip? I will swim in a vat of you..... you get the picture.  

Unfortunately for my waistline, with all of the extra free-time (i.e. being jobless/on the hunt for something new,) I've had the opportunity to create many of these delectable dishes for myself and family.  (Luckily, they all eat pretty healthy, so I've tried to keep the deep fried wonderful-ness to a minimum) but I simply couldn't pass up these cookies.  I've never been much of a sweets person, (give me a french fry any day) but I love the act and smells of baking.  Then, with a little help from {interest and my homegirl Martha, I found potato-chip cookies.  A way to satisfy every facet?  I'm in!  Here's what you'll need...

Martha Stewart's Potato Chip Sugar Cookies

Ingredients:
* 2 sticks softened unsalted butter (oh haiiii there Paula. Knew you'd love these.)
* 3/4 cup packed light brown sugar
*3/4 cup granulated sugar
* 1 tsp pure vanilla extract
* 2 large eggs
* 2 1/4 cup all purpose flour
*1 tsp baking soda
* 3/4 tsp coarse salt
* 4 cups coarsely crushed potato chips divided

Directions: 
1. Preheat oven to 375 degrees. Beat together butter and sugars with a mixer on high until fluffy. Add vanilla and eggs and beat on medium until combined.

2. Add flour, baking soda, and salt and beat on low until combined.  Stir in two cups of potato chips.

3. Roll dough into 2 inch balls then roll in remaining potato chips to lightly coat.  Place cookies two inches apart on a cookie sheet lined with parchment paper.  Bake 18-20 minutes until golden.  Let completely cool.

YUM right?!  These little guys were a hit with the family and friends for sure!  (Personally I almost made myself sick licking the bowl.  I'm essentially a child.)  What are your favorite comfort foods?  xoxo Fearsy
